Solidarity action: soups for students in precarious situations at the Amiens IUT

Published on : 31/03/2022

[ Solidarity action ] In order to help the solidarity grocery store, AGORAé, of theUniversity Picardie Jules Verne, five students of the professional degree "Food products, marketing and communication of food with allegation", of the department of Biological Engineering, of the IUT of Amiens, have set up the project Soli'soup. Thanks to the help of several partners including the CTCPA, which is hosted in the premises of the Picardie Jules Verne University, the students have produced 50 liters of soups that they have deposited at the solidarity grocery store. A great initiative!

In order to diversify the range of products distributed by the AGORAé grocery store to these beneficiaries, five students of the professional degree of the Biology Engineering Department of the IUT of Amiens have set up the Soli'soup solidarity action project. Their objective? To offer the AGORAé grocery store 50 liters of soup; butternut / coconut milk.

After having formulated their recipe with the help of one of the lecturers of the degree, who is also a chef at the Saint Martin hotel school in Amiens, the students first approached the DGCCRF of the Somme and on their advice, they asked the CTCPA of Amiens to ensure the stability and durability tests of the manufactured products. Alexandre DUPUIS, director of the CTCPA of Amiens has directly accepted to help the students in their solidarity action.

The CTCPA has helped students with: the development of a sterilization schedule adapted to their recipe, the realization of microbiological analyses (stability tests) to ensure the safety and production of their soup bottles.

Marie HEBERT, project manager at the CTCPA accompanied the students on the development of the recipe on an industrial scale. Together, they studied the sterilization scale, the technical feasibility, the viscosities... On March 14th, the students saw their product being born:

The students then donated the bottles of soup to the IUT's AGORAé grocery store. The soups were distributed on Saturday March 26. They will be distributed as they come in. The members of the grocery store will be able to come whenever they want to get their bottle.

Hydrogen Peroxide Vapour decontamination of dry ingredients

Dry and dehydrated ingredients are widely used in the food industry. These internationally traded products are generally contaminated by a microbial flora consisting of pathogenic bacteria, spore-forming bacteria, yeasts, molds and toxins such as mycotoxins produced by certain molds during storage. Decontamination is therefore desirable; however, dry products are difficult to treat, being sensitive to humidity and high temperatures. The CTCPA has been working for several years in Collective Research (VAPDEC then OXYMORE projects - reports available on request) on an innovative chemical decontamination technology using Hydrogen Peroxide Vapor, in collaboration with our partner UniLaSalle in Beauvais.
