Introduce us to your business

Le Beau Geste is an organic cookie factory. We make organic cookies, sweet and savory, based on legumes. We are also a solidarity and integration company because we recruit people who, because of the social or personal difficulties they encounter, are not likely to be hired directly on the job market. Why did you choose the legume route?

Legumes have several advantages:

  • Environmental: they are nitrogen fixers, so they increase soil fertility and improve the productivity of agricultural land. They also reduce dependence on synthetic fertilizers used to artificially introduce nitrogen into the soil.

  • Nutritional: some legumes are rich or sources of fiber, vegetable proteins, essential amino acids, minerals, B vitamins or even complex carbohydrates. They contribute to a well-balanced diet compatible with most diets.


Tell us about one of your products!

Taste and texture are particularly important to us, so we have developed our organic recipes with the help of pastry chef Pascal Giry. We offer 3 sweet and 3 savory recipes:



Sweet recipes :

  • Cookies with legume flour, dark chocolate chips and sunflower seeds

  • Shortbread with chickpea flour and orange blossom

  • Shortbread with rice flour and lentils with cranberry




Savory recipes :

  • Rice and lentil flour shortbread with parmesan and fennel seeds

  • Shortbread with chickpea flour, tomatoes and Espelette pepper

  • Shortbread with chickpea flour, mustard and poppy seeds


Our cookies are distributed within the BIO speciality network, in local grocery stores and on our e-shop from February 2023.

Why did you work with the CTCPA?

Le Beau Geste is a beautiful collective work. I have worked with the CRITT PACA and the CTCPA. Indeed, thanks to a grant from the South region, I participated in the program " Innov'Agro " of CRITT PACA, which helps small and medium-sized companies in the agri-food industry that have many ideas for innovation and a real desire to move forward on this subject to ensure their development. However, they do not always have the resources and skills to assess the feasibility of projects and bring them to fruition. In addition to its support, the CRITT PACA put me in touch with the CTCPA, which is the specialist capable of conducting all the technical aspects, including the adaptation of recipes and their industrial transfer.

How did the CTCPA support Le Beau Geste?

The CTCPA of Nantes and more particularly Marie-Luce LE BRIQUER, project manager for cereal products, has accompanied Le Beau Geste in the framework of the Innov' Agro program. After creating the recipes with Pascal Givry and before industrializing them, Marie-Luce helped me to meet the requirements and constraints of production. In particular, she helped me to obtain greedy, crispy, colored cookies, which can be preserved and adapted to the thread-cutting process.

What did you think of the CTCPA's support?

I was very satisfied with the support of the CTCPA. Despite the distance, we were able to work in all transparency and intelligence. I appreciated the fact that Marie-Luce left room for my ideas and listened to my feelings while being a force of proposal. She knew how to take into consideration my expectations, as a true R&D professional.

I left with very clear documents and operational recipes. Some were 100% validated and others are good basics.
