Today, the consumer is expressing new demands for transparency in the area of food safety following the numerous food scandals that have been in the news in recent years. From an economic point of view, the tensions at the level of both agricultural incomes and consumer purchasing power (impossible to sell for more, impossible to buy for less), open a space for production control tools that can significantly reduce, at a controlled cost, the useless consumption of raw products through poorly conducted processing, and/or the risk of downgrading the product when it is marketed due to an insufficient level of flavour at the end of processing.
