Research projects on cereals and legumes: CTCPA participation in 2 Qualiment projects in 2022

Carnot Qualiment® finances research projects conducted within its research units to anticipate and prepare the research and innovation needs of food companies. 8 research projects that will start at the beginning of 2022 have been selected for their scientific quality and their innovation potential. The CTCPA is involved in two research projects on cereals and pulses.


The cereal and legume research projects in which the CTCPA is involved are :

 

  • CAPS : Alternative Cooking of Dry Cereal Products 


Objectives Explore alternative cooking technologies with a focus on microwaves coupled with infrared heating as an alternative to conventional processes in order to develop new structures/textures, improve nutritional quality, reduce the risk of neo-forms (acrylamide) and reduce environmental impact (energy).

  • GermAGE Characterization of the physicochemical properties and the nutritional interest for the elderly of mixed flours based on germinated cereals and legumes during the bread-making and pastry-making processes


Objective Characterize the nutritional and functional properties of mixed flours based on wheat and sprouted lentils for use in bakery products adapted to the abilities and preferences of the elderly, and identify the impact on muscle and inflammatory status in a preclinical model.
