Allergen management: new perspectives for guaranteeing the safety of allergic consumers

Introduction
Faced with increasing cases of food allergy and the need to better protect allergic consumers, allergen management is evolving. On November 27, 2024, the Codex Alimentarius adopted a major revision of the food labeling standard, incorporating scientific advances resulting from joint FAO/WHO work. This update aims to harmonize labeling practices, in particular precautionary labeling (PAL), often criticized for its overuse. At the same time, approaches based on Quantitative Risk Analysis (QRA) and reference doses are helping to improve the reliability of labelling and limit unnecessary alerts. These prospects point to a safer, more transparent future for allergic consumers, while providing manufacturers with concrete tools to control and justify their labeling. This article takes stock of the new directions in allergen management and the opportunities they offer the food industry.
