CTCPA supports Payzan in developing legume-based spreads and pre-production runs

Published on: 19/06/2024

The CTCPA supported start-up Payzan in the development of its new range of legume-based spreads and their pre-production at the FoodLab (Beauvais, 60). We spoke to co-founder Tristan FERTE about his activity and our support.

"We have always received relevant answers and have been satisfied with the results obtained. Both before and during the project, we had a very good experience with the CTCPA."

Tell us about your start-up PAYZAN

4 years ago, my brother and sister took over a family farm and became farmers. Two years later, I moved closer to them geographically. Between the three of us, we asked ourselves: how could we make better use of the farm's produce? That's when the Payzan project was born!

We began marketing our roasted soybeans and soy hummus in April 2023. Our products can currently be found in around a hundred outlets (organic stores, producers, bar-restaurants, etc.) between Lille, Paris and Reims. We also sell them on our website.

Today, we're developing a new range using products from other partner farmers. 98% of the ingredients we use come from within 50 kilometers of our farm.

As part of the partnership set up between the CTCPA and KissKissBankBank at the beginning of the year, we have launched a KissKissBankBank participative financing campaign for the production of these new recipes.

Why did you contact the CTCPA?

We met the CTCPA through the Euralimentaire incubator. We contacted the CTCPA to get help with the development of our spreads and to manufacture pre-production batches at the Euralimentaire incubator. FoodLab, UniLaSalle and CTCPA's multi-process food hall.

How did the support go?

I really enjoyed working with Marie HEBERT (Technology Project Manager) and Carla LUCET (National Start-up Manager). The project went very quickly. We always received relevant answers and were satisfied with the results. Both before and during the project, we had a very good experience with the CTCPA!

Where do you stand today?

We're continuing to build our pre-series for our crowdfunding campaign and for commercial release in mid-August.

We'll be present at the Made in France trade show from November 8 to 11 for those who wish to visit us.

Hydrogen Peroxide Vapour decontamination of dry ingredients

Dry and dehydrated ingredients are widely used in the food industry. These internationally traded products are generally contaminated by a microbial flora consisting of pathogenic bacteria, spore-forming bacteria, yeasts, molds and toxins such as mycotoxins produced by certain molds during storage. Decontamination is therefore desirable; however, dry products are difficult to treat, being sensitive to humidity and high temperatures. The CTCPA has been working for several years in Collective Research (VAPDEC then OXYMORE projects - reports available on request) on an innovative chemical decontamination technology using Hydrogen Peroxide Vapor, in collaboration with our partner UniLaSalle in Beauvais.
