Carla LUCET, Project Manager Development East and National Start-up Manager, was interviewed by FoodTech Lyon AuRA on May 22, 2023. Discover the interview below.


The CTCPA, Centre Technique de la Conservation des Produits Agricoles (Technical Centre for the Conservation of Agricultural Products), founded in 1950 and historically a reference technical center for preserved and dehydrated products, has long since extended its spectrum of expertise to all types of food products (except wines and spirits and fermented dairy products).

The CTCPA employs around a hundred people and offers technical support and training in connection with the food transition on four main themes:

  • R&D to develop new products and processes

  • Food quality and preservation to ensure the microbiological, nutritional and organoleptic quality of products throughout their best-before date (BBD) or minimum durability date (MDD).

  • Industrial and environmental performance to meet the challenges of sustainable development


These three different themes are developed in our technology halls in Nantes, Amiens, Auch and Avignon.

  • Packaging, with an expert laboratory in Bourg en Bresse, to work directly with packaging suppliers in the food, pharmaceutical and cosmetics sectors.


The CTCPA works with all types of players in the food sector, from very small businesses to major groups, and is developing strongly in the following areas the start-up segment, which accounts for more than 17% of our customers. It's important to make our technical expertise, skills and know-how known to startups who, in 75% of the cases we encounter, do not come from the agri-food sector and therefore have no technical background before embarking on their project.

As part of the first edition of the Trophées de la FoodTech Lyon AuRA, the CTCPA awarded Maison Lipopette, winner in the processing category, a prize worth €3,000 (inc. VAT), equivalent to 2.5 days' work in the form of support tailored to the project's needs (technical hall trials, training, advice, etc.).

The support we offered Maison Lipopette came at just the right time to help Etienne Rozand and his team acquire the technical skills they needed to industrialize and market the sauce they so brilliantly developed at their restaurant.

Our role alongside them was to structure the project and prioritize the various technical objectives. The initial packaging was a real hindrance, as it didn't correlate with the world and codes of soy sauce on retail shelves. So we had to rethink the entire packaging and rework the manufacturing process, while preserving the originality of their sauce in terms of taste, color and texture, with strong demands for clean label and made in France!

We were also able to support them in relations with subcontractors It's essential for startups that outsource the manufacture of their products to collect precise information on raw materials, processes and finished products, so that they can retain control over the manufacture of their products, regardless of the subcontractor they choose.

The FoodTech Lyon AuRA, of which the CTCPA is a part, is a very dynamic ecosystem that enables us to connect the various links in the chain, from agricultural production to the consumer, via startups, VSEs, SMEs and major groups.

We are facing major challenges in the food sector, and the solutions will come from the synergies that will be created between all the players involved: thehe FoodTech Lyon AuRA is a catalyst for innovative initiatives being built up across the region, adding considerable value to the region as a whole!

Decontamination is therefore desirable; however, dry products are difficult to treat, being sensitive to humidity and high temperatures. The CTCPA has been working for several years in Collective Research (VAPDEC then OXYMORE projects - reports available on request) on an innovative chemical decontamination technology using Hydrogen Peroxide Vapor, in collaboration with our partner UniLaSalle in Beauvais.
