Winner of the "Food Creativ" competition with the "Vegetable" category prize and the "Consumer Prize", the start-up SINCERA, founded by Annabelle POINT, offers healthy and tasty recipes based on French legumes from organic farming. The CTCPA has accompanied SINCERA on the choice of the process, the optimization of the formulation and the heat treatment scales as well as on the manufacturing of pre-series. Back with the founder on this support.




Congratulations for your two prizes in the Food Creativ' contest! Why did you participate?

Thank you! Food Creativ' rewards innovative food products created in Haut-de-France. Sincera is a startup from Lille that offers grocery productsgreedy and healthy based on French legumes from theWe were convinced that this contest was a great opportunity to promote our recipes in the region and to gain visibility if we were lucky enough to win a prize. So we are more than happy since we got two for the price of one

How was the idea of creating SINCERA born?

SINCERA is the result of a joint reflection with our partners (Sparkling Partners, Ternoveo) of to create and develop a plant protein sector in Hauts-de-France to meet the growing demand for plant products as substitutes for meat, the need to diversify crops in the region and to limit the use of chemical inputs . Our answer: by creating high value-added food products rich in organic vegetable proteins! At SINCERA, we have chosen to give priority to legumes which are nutritionally and environmentally very interesting.

Your promise is "Unleash the pleasure of eating better!" what does that mean?

Our objective is to accompany consumers in the dietary transition without putting up any barriers. That's why we offer them SINCERA, a brand whose products are really tasty, French, organic, vegan with a nutri-score A and a Planet Score AAA. At SINCERA, we combine pleasure, health and respect for nature in all transparency, and the consumer is offered to enjoy without questioning

What products do you offer?

We offer spreads (for a gourmet and healthy aperitif!), some hot sauces (the great classics to offer consumers sauces that are as healthy as they are tasty, for balanced meals with ease). Most recently, we have released our soups. All our products are prepared with French legumes! The recipes are designed to have a full contribution. At each stage of recipe development, we pay close attention to nutritional and environmental aspects.

All the recipes are imagined and created by myself. At the very beginning of the project I also called upon a chef to help me imagine the recipes. I develop them in my laboratory (my kitchen) and then call upon the CTCPA for the technical formulation and the development of scales.

Our lentils bolognese recipe is the winner of the contest FOOD CREATIV ! Our recipe was the winner of the "Vegetable" category (This prize rewards innovations using only vegetable ingredients that are in line with new consumption patterns). It also received the "Consumer Prize" (out of more than 10,000 votes, we received more than 3000!).

This recipe is inspired by the traditional bolognese. It combines greed and vegetable flavors for a dish that is as delicious as it is comforting! It is rich in protein and fiber. This is the first recipe I came up with. My thought process was, "What's the first product we always have in our cupboard that we grab to cook quickly when we don't have the time or don't feel like cooking?"

Our products are distributed by Chronodrive at the national level. In Haut-de-France, you can find our preserves in a few stores and grocery stores. In Paris, we are just starting our development and you can find us in 4 stores. Soon, we want to launch our e-commerce site to be accessible everywhere in France!

Why did you call on the CTCPA?

As an agri-food engineer, I have known about the CTCPA for a very long time! When I was designing my products, I already knew that we would go through the CTCPA, for several reasons:

  1. When you develop recipes at the laboratory scale, you don't realize the proportions at the industrial level. With the CTCPA, which is the interface between R&D and industry, I knew that I could have a macro vision on the rendering of products at real scale.

  2. We also needed the CTCPA to define our scales and to ensure that the products, after heat treatment, would keep the same qualities in terms of taste, texture and visual as the initial recipes. The CTCPA was very helpful on this subject! At the beginning, we had opted for non-acidic sterilized recipes but the result did not suit us. The CTCPA then advised us to acidify and pasteurize to have products with better organoleptic qualities and a beautiful aspect. I think that if the products are so good today, it is largely thanks to this work!


The CTCPA is a key partner for SINCERA, with which I have been working for several years (in particular with Nicolas LEHEBEL, Nicolas MARISSAL, Alexandre Dupuis and Caroline BROHON). The positive points of the CTCPA are for me:

  • Very educational and patient teams, especially when dealing with people who have no training in food processing, for example.

  • Dedicated teams. As project leaders, we are quite demanding on the output because of our financial means. The working days are intense but very rich in learning!

  • A technical center with integrity and a pro-results orientation

  • Projects completed on time

  • And teams that are always available AFTER the project! The CTCPA is not only a technical partner, it is a real partner with whom we benefit from long-term advice.


How will you continue to support consumers in the food transition ?

For us, accompanying the consumer to go towards the food transition, it also passes by the school or company canteens. In the future, we would like to be able to deliver our products to canteens that cannot cook to diversify their offer of vegetarian meals. We are therefore currently working on the development of catering formats for our sauces and spreads.
