Created by Zacharie Thiery, the company OGUST FOOD offers enriched gastronomic solutions to fight against malnutrition. The CTCPA has supported the company by the transposition to a pilot scale of the formulations and the process, then by the manufacturing of marketable pre-series with the implementation of a sanitary measurement plan. Zacharie THIERY, founder, comes back with us on this support.

How was the idea to create OGUST born?

It all started when my grandmother fell into the vicious circle of undernutrition* after the death of my grandfather. It all started when I saw how this condition was managed in a retirement home. I believe that everyone should have access to an adapted and tasty diet, whatever their state of health. I then decided to reconcile nutrition and gastronomy to restore appetite to health.

What does OGUST propose to fight against undernutrition?


At Ogust, we believe that everyone should have access to an adapted and gourmet diet, regardless of their health condition. We design gourmet and nutrient-enriched culinary solutions that can be easily integrated into meals, in small quantities and simple to use for professionals. Our product is the first ready-to-use savory nutritional supplement. They are delivered by care professionals as part of the management of undernutrition.

We have launched our first line of gourmet sauces. They contain 10 grams of protein per serving. They are frozen pucks that allow you to single-serve each portion. Our products combine three qualities: taste, convenience and nutrition. We collaborate with Christian Têtedoie (starred chef, Meilleur Ouvrier de France) to help us design tasty gastronomic solutions, adapted to the operational constraints of chefs in medical catering.

We currently offer two recipes:

  • Mushroom sauce with mushrooms and onions browned in white wine

  • The cheese sauce is made with cream, parmesan, mascarpone, gorgonzola, melted onions and egg yolks.


 

Each sauce is available in about fifteen recipes for the catering industry. They can accompany white meats, fish and starchy foods or enrich snack dishes, au gratin and side dishes. The aim is to offer chefs the possibility of adding the sauce of their choice to their dishes and to give patients the choice of personalizing their plate according to their preferences, so that they can remain involved in their diet.

By the end of the year, we are releasing 3 more sauce recipes to complete our line. We are also working on other products for other times of the day.

 

Why did you choose the CTCPA to accompany you? 

I chose the CTCPA because for me it was an obvious choice. As a Technical Center referent on the issues of heat treatment, I did not see myself working with another organization. I met Nicolas BIAU (Director CTCPA Avignon - South-East pole) at the very beginning of my project in 2019. In the meantime, we worked for a year internally on the R&D of our products to validate the technical prefeasibility. In 2021 I contacted the CTCPA again and it is Carla LUCET, national manager of the start-up who took over. The CTCPA accompanied us by the transposition to the pilot scale of the formulations and the process then by the realization of days of marketable preseries with the installation of a plan of sanitary measurement.

The CTCPA allowed us to concretize our project and to change scale. For the first time our products were made in an industrial way, the range was born before our eyes.

The great + of the CTCPA ? It is the flexibility and the accompaniment by the project manager! Carla LUCET was very present and reassuring. She was herself a project leader and knows the stakes of the job. I also met Nicolas BIAU, director of the CTCPA of Avignon, site on which we were going to carry out our pre-series, who put me in confidence and presented me his teams. Then Fabien AUPY, project manager at the CTCPA, accompanied us on the test days. His different experiences on multiple projects since 20 years at the CTCPA and his expertise were very beneficial. As a project leader / start-up, we have a lot to gain from the know-how of the CTCPA in the context of an innovation process. I think that the CTCPA offers support, flexibility and tailor-made advice that I could not have found elsewhere. Our issues were understood immediately.

The manufacturing of pre-series with the CTCPA allowed us to conduct a scientific consumption study with the CSGA INRAE and the CHU of Dijon, a catering company partner and a group of EHPAD to be sure that our sauces are appreciated and well consumed. Today we are delighted with the results!

What are the next steps for you?

We will present the results of our study at the Journées Francophones de la Nutrition in November 2022.
We are currently starting the marketing phase. To be continued!
