The CTCPA helped cookie manufacturer LES PALETS DU SOLEIL launch new products by carrying out physico-chemical analyses and calculating nutritional values. We spoke to Vincent NOËL, manager, about his business and our support.

Introduce us to the LES PALETS DU SOLEIL cookie factory

Les Palets du Soleil is a family-run cookie factory founded in the 1980s. We make 100% natural dry Provencal cookies with a long minimum durability date in our laboratory in Sainte-Maxime, Var. The cookie factory has had 4 families of craftsmen.

My wife and I have taken over the cookie factory in September 2019. We have totally left our previous lives behind. I was working in banking and my wife was a nurse. The cookie factory was an unexpected professional opportunity. Indeed, it was while on vacation in the Var that we met the former owners, who were looking to sell the cookie factory.

Between 2018 and 2019, I learned the trade, we finalized the file with the banks, we refined our knowledge.

Today we have 3 employees. I work in production, and my wife and our colleague work in packaging. In the summer, our activity increases, so we hire new staff.

98% of our products are sold to professionals (wholesalers, delicatessens, convenience stores and small supermarkets), while the remaining 2% are sold to individuals via our participation in one trade show a year and via our e-commerce site.

Why did you contact the CTCPA?

We contacted the CTCPA because the previous managers of Les Palets du Soleil had used your services and advised us to work with you!

So I decided to take the "Basic principles of biscuit-making" course at CTCPA Avignon. We then called on the CTCPA to calculate the nutritional values of our new recipes and carry out physico-chemical analyses.

How did the CTCPA support Les Palets du Soleil?

The CTCPA's support included the provision of a nutritional table required under INCO regulations, and the physico-chemical characterization (aW and moisture) of the cookie.

How did the support go?

We were very satisfied with our two main contacts. Today we deal with Gilles BERTHEAU. Your former colleague was a great help when we took over the company. At the CTCPA, we've always been very well received, guided and advised. Exchanges are simple, clear and rapid.

As far as analyses are concerned, we have always obtained a thorough feedback, which gives us peace of mind when it comes to our production.

In short, we've always had a very good experience, whatever our requirements: training or analysis.

Where do you stand today?

We're looking to develop new sweet products. With the rising cost of raw materials, our development projects are slowing down, but every day is a new challenge. It's a real passion, and you have to give it your all. We always come across rewarding projects: the acquisition of a machine, the launch of a new product, a new customer...
