The CTCPA helped Mrs DOUGLAS to create her project, with a diagnosis of the composition and shelf life of a range of cookies. A look back at her project and our support.

Tell us about your project

As a consumer, I'm not satisfied with the range of cookies on the market. I can't find any additive-free cookies with clear labels in the shops. That's why I wanted to create my own range of cookies with a simpler composition, made with chocolate and dried fruit. My aim is to sell them in organic and natural product stores and on my e-commerce site.

Why did you work with the CTCPA?

I formulated my chocolate and fruit cookie recipes on my own, at home. To make sure that I was complying with health and safety requirements and standards, and that my project could be industrialized, I wanted to be accompanied by professionals. So I contacted the CTCPA for help with the physico-chemical characterization of my products and advice on marketing.

How did the CTCPA help you, and what did you think of it?

I was supported by Marie-Luce LE BRIQUER (Cereal Products Technology Project Manager) and Gilles BERTHEAU (Cereal Products and Vegetable Proteins Business Manager), who carried out a diagnostic to characterize my cookie range, listing the risks of spoilage and identifying the levers for product optimization (formulation, process or packaging).

I was very satisfied with the support I received from the CTCPA. Marie-Luce and Gilles were very responsive, clear and transparent. We were able to move forward intelligently.
What's more, all deadlines were met.

I'm looking forward to continuing the partnership beyond the recipe, and to benefiting from the CTCPA's various areas of expertise!

What are your next goals?

I'm still working on the recipe following the CTCPA's recommendations.
At the same time, I'm thinking about outsourcing the manufacturing. Ideally, I'd like to entrust it to an ESAT, to contribute to a solidarity initiative!

The CTCPA has been working for several years in Collective Research (VAPDEC then OXYMORE projects - reports available on request) on an innovative chemical decontamination technology using Hydrogen Peroxide Vapor, in collaboration with our partner UniLaSalle in Beauvais.
