Back in pictures on the last cookie cycle of the CTCPA in Avignon - June 20 to 24, 2022

The last cookie cycle took place at the end of June in the technological hall of the CTCPA of Avignon. Throughout the week, the trainees were able to advance on their project of artisanal cookie factory, and to work on their recipes during the days of practical work.



On the program:

  • To know the regulations related to the production of cookies and cakes (Hygiene, Labelling)

  • Understand the technological role of the different raw materials (flours, egg products, fats, sweeteners, baking powders)

  • Master the steps of cookie making: mixing, shaping and baking

  • To know the possible alterations during storage, to know how to determine a shelf life and to choose an adapted packaging
