EUROPEAN DEMETER PROJECT : THE VALORIZATION OF THE CO-PRODUCTS OF THE FRUIT AND VEGETABLE INDUSTRIES

The CTCPA along with other partners (INRAE, Flanders Food, Verduyn, Juicy Group) participate in the European project DEMETER on the valorization of fruit and vegetable co-products from food industries into juices and soups.

The different properties of raw co-products as well as of food products formulated from these co-products are evaluated in order to define the feasibility of their valorisation: microbiological, nutritional, functional, organoleptic, environmental, economic properties etc.

One of the axes of the European DEMETER project, led by INRAE, aims to study the incorporation of fibers from the pomace of fruit and vegetable co-products in juices and soups as an ingredient to improve their texture.
