Evaluation of the sustainability of the "Canard à foie gras du Sud-Ouest" Protected Geographical Indication

Agri-food chains are facing multiple issues and questions related to the different aspects of sustainable development. The objective of this work is to propose methodologies for assessing the sustainability of processed agrifood product chains by focusing on the environmental impacts and socio-economic performance of the Protected Geographical Indication (PGI) foie gras sector in the Southwest in relation to its territorial location. The environmental impacts are studied using the Life Cycle Assessment (LCA) method.
The results provide an in-depth look at the main contributors to the sector's impacts at each stage, from the upstream rearing and force-feeding phases, which are predominant in the sector's overall balance sheet, to final consumption. A new method is also proposed to evaluate the social, economic and territorial performance of a food chain. The performance measurement is divided into four categories:
- dignity and well-being of workers,
- territory and local life,
- fairness and integrity of business practices and
- wealth creation, for which a set of evaluation indicators is defined.
This method aims to identify where there is room for improvement in terms of the sector's socio-economic performance. The approach implemented underlines that the sector is globally very efficient on the studied dimensions with nevertheless challenges concerning the precariousness of some jobs and ways of improvement concerning the participation in the local life.
