The CTCPA presented the results of the SAFOOD project at the IAFP international symposium!

Since 2005, the International Association for Food Protection's European symposium has been shaping the future of food safety by providing a forum for the exchange of ideas between different European agri-food organizations working in industry, government and academia: Project SAFOOD.

For the 2021 edition, 1era In view of the health context, the CTCPA organized the session "Clostridium Botulinum: re-emerging risk? Emmanuelle Boix, PhD student in microbiology at CTCPA presented her results on the probability of growth of Clostridium sporogenes spores following a low intensity heat treatment as a function of pH and Aw (between 4.5 and 5 and 5 to 11% salt). His results are part of the collective research project SAFOODThis thesis is directed by Dr. Louis COROLLER (LUBEM), Dr. Olivier COUVERT (LUBEM) and Dr. Stéphane ANDRE (CTCPA).thanks to France Olive, Carnot Qualiment and ANRT for their co-financing!
