Small-scale processing of fruit and vegetables in mobile and flexible units close to your home? FOX takes up the challenge!

When we think of food production, the image of large factories, often located outside cities, comes to mind. But imagine if a container, much closer to home, could do the same thing? FOX - Food processing in a Box - is a project that aims to develop just that, by transforming large-scale fruit and vegetable processing technologies into small, mobile and flexible units close to home!

FOX's ambition is to stimulate short food supply chains, promoting the transition from a rather centralized industry to local production centers. The European regions in which FOX technologies will be implemented and integrated into the entire food production chain are called food circles. In these regions, which are characterized by a large production of fruits and vegetables (conventional and organic), the impact of the FOX approach on the environment, businesses, inhabitants and their health will be assessed. This, together with the opinion of committed consumers, will serve as essential input for the further development and expansion of FOX.

How does it work?
The container unit comes to your area. Easy to move, yet fully equipped with the latest in sweet food processing technology. Fruit and vegetable growers bring in fresh produce and the processing is done on site. Juice is made, vegetables are dried and everything is sustainably packaged. The short-chain approach creates business opportunities and consumers are re-evaluating the benefits of locally processed foods.

What are our challenges?
-    Health and sustainability. Innovative processing solutions are flexible, resource-efficient and based on seasonal trends and demand. They take into account the expectations of farmers and small food businesses, examine technical and economic feasibility and consider the needs of the food chain and consumers.
-    Transparency and trust in the agri-food chain. Consumers will be actively involved in the development of new products and business options for sustainable consumption.
