Variable-temperature heat treatments: a new generation of appertizing scales that limit overcooking

Introduction
Traditional heat treatments apply a constant temperature, often to the detriment of the organoleptic quality of pre-packaged products, causing overcooking especially at the edges.
To remedy this, variable temperature heat treatments (VTTT) offer a progressive, adjusted heating profile, limiting overcooking while guaranteeing microbiological safety. Thanks to the innovative STERI'OPT® tool developed by the CTCPA and AgroParisTech, it is now possible to optimize these schedules by precisely simulating heat diffusion in the product.
