Webinar - Microwave pasteurization of food products

Since the end of 2021, the CTCPA in Avignon is equipped with a microwave heat treatment tunnel. This tunnel is intended for the pasteurization of pre-packaged food products, such as ready-made meals for example. The microwave technology is already well known and used for cooking or tempering frozen products, and it is now adapted to pasteurization of processed foods. Discover more in our webinar!
The CTCPA is organizing a webinar on this new microwave technology on Tuesday June 28. Two sessions are scheduled: English version at 11 am / In French at 2:30 pm.

Heat treatments at the CTCPA
The main objective of heat treatments is to destroy by heat the reproduction capacities of microorganisms, in order to ensure the conservation of products at room temperature in complete safety. The CTCPA helps you to define the optimal and specific scale for each couple product / packaging which is essential to guarantee a safe treatment (microbiological quality) and optimized (organoleptic quality). Heat treatments also allow to destroy enzymatic activities to stabilize the products or to reach a certain degree of cooking. Pasteurization, sterilization, microbiological stability control, ohmic heating, development of isobaric scales, microwave: we help you optimize your heat treatment schedules to improve the organoleptic and nutritional qualities of your products, reduce processing times and decrease energy consumption. We use our software Steri'Opt.
The CTCPA is recognized by the DGAl (DGAL/SDSSA/N2011-8153) as the reference center for scale validation.
