SODELEG undergoes an audit to prepare for FSSC 22000 certification with the CTCPA

Published on : 08/10/2021

Before passing the FSSC 22000 version 5 certification audit, SODELEG called upon the CTCPA to know its level of control. Virginie MOREAU, food safety quality manager, comes back with us on the preparation audit.

SODELEG : European leader in onion and shallot dehydration

Created in 1984, SODELEG is the European leader in the dehydration of yellow onions (including organic quality), white onions and shallots. 100% French supply. Its products are marketed in different forms: strip, granulated, powder, fried and grilled strip.

SODELEG is part of the ALLIANCE group and has about 85 employees throughout the year (140 during the campaign). Its customers are large food groups such as Nestlé, Unilever... 75% of its turnover is made in export (Europe, Africa, Japan).

SODELEG is supplied by farmers located within a radius of 100 km around its premises (+ Jura and Côte d'or), which represents approximately 140 farmers. This represents a production of 80 000 tons of fresh products per year (12 000 tons of dehydrated products). The dehydration campaign takes place from August to December.

The CTCPA, a historical partner for SODELEG

The CTCPA is a long time partner. Partnership that started with the implementation of HACCP and ISO 9001 in 1996.

"Since then, the CTCPA has been supporting us to enable us to respond to changes in standards and regulations, either through on-site training of the steering committee or through interventions in the field.

The CTCPA is also involved in development projects or validation files, such as the one on the thermal effect of dehydration on microbiological quality.

We are always very satisfied with the availability and the relevance of the interventions of the CTCPA teams.

Focus: the SODELEG quality service

The quality department of SODELEG is composed of the quality manager, the laboratory manager and 2 laboratory technicians.

In 1996, SODELEG has implemented the ISO 9001 and HACCP. Over the years, SODELEG has been able to advance with the evolution of standards. In 2013, the company passed the FSSC 22000 certification to meet the requirements of the sector and the demand of its customers.

Virginie MOREAU explains: "Quality and food safety are strong policies of SODELEG. We have the HACCP culture for many years, we constantly follow the evolution of standards. In addition, our customers of large food groups accompany us in the continuous improvement of our system. We can be proud to have a very high compliance rate.

Preparing for the FSSC 2200 certification audit with the CTCPA

Following the evolution of the FSSC 22 000 version 5 standard in 2018 based on food safety management, we wanted to have a diagnosis carried out to identify our level of control of the new requirements of the standard and to prepare ourselves as well as possible for the certification audit.

So we called in the CTCPA and they came on board in September 2020.

Alexandre DUPUIS, director of the CTCPA Dury site and QHSE consultant, spent ½ day preparing for the audit in terms of documentation, then spent 2 days on site, during which he discussed with the various stakeholders: management, human resources, production, quality, procurement, purchasing, sales, laboratory...

We are very satisfied with the different stages: the upstream exchanges to identify our needs in order to make a proposal for intervention, the audit on the ground which took place with constructive exchanges and finally the realization of the report with an accompaniment to identify the corrective actions to be set up.

The audit report was produced in PowerPoint format with visuals, which allowed us to optimize our communication in the field in relation to the discrepancies identified.

This audit allowed us to confirm our level of mastery of the new requirements of the FSSC 22 000 version 5 standard, to implement improvement actions which resulted in obtaining the certification.

To go further :

In addition to the audit to prepare for certification, the CTCPA assists companies in their optimizations, particularly in terms of cleaning and disinfection. With more than 90 training courses dedicated to the agri-food industryOur training centers are spread throughout the territory and our 35 trainers accompany with the same energy, large groups, SMEs, craftsmen and project leaders.

Hydrogen Peroxide Vapour decontamination of dry ingredients

Dry and dehydrated ingredients are widely used in the food industry. These internationally traded products are generally contaminated by a microbial flora consisting of pathogenic bacteria, spore-forming bacteria, yeasts, molds and toxins such as mycotoxins produced by certain molds during storage. Decontamination is therefore desirable; however, dry products are difficult to treat, being sensitive to humidity and high temperatures. The CTCPA has been working for several years in Collective Research (VAPDEC then OXYMORE projects - reports available on request) on an innovative chemical decontamination technology using Hydrogen Peroxide Vapor, in collaboration with our partner UniLaSalle in Beauvais.
