A beautiful week of Cycle " CONDUCTING A CONSERVERY ACTIVITY " took place from January 18th to 22nd at the CTCPA of Nantes !

[Cycle " to lead a canning activity from 18 to 22 January 2021] : Our trainees had the opportunity to learn about the regulations of canning, the implementation of hygiene practices, the basics of microbiology, the choice of packaging and equipment...

During this training, the CTCPA puts at the disposal of its trainees its technological hall and its latest equipment for the manufacture of various vegetable and meat canned products.

The practical part of this session is carried out on the equipment of the technological hall of the ONIRIS school (National Veterinary, Agri-food and Food School).

The trainees were also introduced to the good practices of operating an autoclave. Finally, they made vegetable spreads, vegetable soups, ratatouille and ready meals allowing them to understand the formulation constraints and the impact of sterilization on these products.
