    LEARNING OBJECTIVES

  • Identify the technical constraints, the necessary organization of the production (treatment of the product and process) as well as the management methods essential to the respect of food safety
  • To be able to manufacture and sterilize the canned goods of your cannery
  • To be able to drive a vertical static autoclave (for your self-certification)
  • Facilitate the reflection on the setting up of a transformation project in relation with its budget

    Content of the training

  • Part 1: The prerequisites for the manufacture of canned food
  • Regulations: Overview of the regulations to which the various vegetable and animal food productions are subjected (hygiene package, sanitary approval file, labelling, weight control...)
  • Regulations: Definition of a can
  • Regulation: External actors, health authorities, analysis laboratory
  • Quality principles: The sanitary control plan, Hygiene and sanitary safety procedures, HACCP, Traceability, Good hygienic practice guides, Cleaning and disinfection
  • Part 2: The principles of sterilization
  • Basics of food microbiology, Establishment / validation of heat treatment schedules, Critical parameters for the application of a schedule, Autoclave instrumentation
  • Part 3: Packaging
  • The main packaging methods (jars, boxes, plastics...), Choice of packaging, Conformity of the sealing: the controls to be carried out, Controls of the finished products, Validation of the shelf life, Physical-chemical analyses: pH, texture, color, Stability test
  • REALIZATION OF TP for the manufacture of products and their packaging.
  • Part 4: Safe operation of the autoclave
  • Food manufacturing, Demonstration of the use of an autoclave, Safety instructions
  • REALIZATION OF WORKSHOP: heat treatment of the manufactured products and control of the autoclave.
  • Part 5: Elements for the constitution of a business plan
  • The stages of your project, Evaluation of the levels of investment in material, Additional purchases: fluids, raw materials

CERTIFICATION EXAM

Evaluation of knowledge by MCQs and case studies. Issuance of a training certificate and a certificate of achievement. Autoclave authorization is the responsibility of the manager. A certification is proposed on request. It is included in the training in case of financing via the CPF. It consists of answering a knowledge questionnaire + a simulation exercise in a technological hall. The results are submitted to the jury.
